Atkins dieters can soon have their fries and eat them too: Low-carb potatoes are due in stores next January.

The potatoes, developed by Danish seed company HZPC and researchers at the University of Florida in Gainesville, have 30% fewer carbohydrates than standard Russet baking potatoes.

“The potato doesn’t look or taste like anything that’s now on the market, and it’s not a genetically engineered crop,” says Chad Hutchinson, an assistant professor of horticulture with UF’s Institute of Food and Agricultural Sciences.
