Living ‘off the grid’ can entail going without some common luxuries.

Eric Valli spent 3 years taking photos of people in the United States who have “decided to live light on the earth.” The photographs are terrific. It looks like Valli spent time with two clans: a frontier/settler type group, and another group that look almost like cave people. I wish he had included more information about them!

You can’t use it in everything, unless your friends absolutely love brown frosting. But when possible, you might consider real maple syrup as a sugar or corn syrup substitute. It actually loads in a lot of good stuff with the calories.

Some benefits of maple syrup were previously known, but University of Rhode Island researcher Navindra Seeram found new anti-oxidant compounds in maple syrup samples taken from Canadian trees. They’re present in the sap alone, but in more beneficial amounts when a dozen or more gallons of sap are boiled down to make a gallon of syrup:

A Brazilian palm berry, popular health food though little research has been done on it, now may have its purported benefits better understood. In the first research involving people, the acai (ah-sigh-EE) berry has proven its ability to be absorbed in the human body when consumed both as juice and pulp. That finding, by a team of Texas AgriLife Research scientists, was published in a recent issue of the Journal of Agricultural and Food Chemistry.
